A couple of nights ago we discovered an amazing new recipe for the spaghetti squash we got from our CSA farm share. It's like a big hearty pasta dish. I swear that any meat-eater will love this!

Spaghetti squash Recipe

1 medium spaghetti squash
2 TB vegetable oil
1 onion, chopped
2 cloves garlic, minced
1.5 cups tomatoes, chopped
2 TB fresh basil, chopped
1/2 cup feta cheese, chopped or crumbled
few shakes sea salt (to taste)

First cut the squash length-wise, scrape out seeds and middle, and lay cut-side down onto lightly greased cookie sheet. Bake at 350 for 30 minutes. In a large frying pan, on medium heat, saute onion in the oil until translucent. Add garlic and cook 1 minute more. Add tomatoes and cook just until warm(about 1 minute) and turn off heat. Scoop out hot flesh of squash into pan. Add basil and feta and mix well. Add salt to taste. Serve immediately. ENJOY!

For much of the day I carry Emmylou in the Moby Wrap. I guess Johanna has been paying attention cause her piggy gets the same treatment. Melts my heart!
